450 grams (1 pound) ground pork (at least 20% fat)
1/2 pound peeled and deveined shrimp (about 16 medium-size shrimp)
1 tablespoon freshly grated ginger
2 tablespoons light soy sauce (or regular soy sauce)
2 tablespoons Shaoxing wine (or dry sherry)
1 teaspoon salt
1/4 teaspoon white pepper
450 grams (1 pound) Napa cabbage
4 scallions, finely chopped
2 tablespoons sesame oil
*Dumpling dough*
420 grams (3 cups) all-purpose flour
1 cup boiling water
1/4 cup room temperature water
1 teaspoon oil
