Beans & Aloo Sabzi (No Onion, No Garlic | Sattvic Recipe)

Ingredients:
• 2 medium potatoes (washed, cubed)
• ~350 grams green beans (chopped)
• 1-inch fresh ginger (finely chopped)
• 2 green chilies (slit or chopped)
• 2 tsp avocado oil (or neutral oil of choice)
• ½ tsp cumin seeds
• ½ tsp turmeric powder
• ½ tsp Kashmiri red chili or paprika
• ½ tsp Kitchen King masala
• ½ tsp dry mango powder (amchur)
• ¾ tsp garam masala
• 1 tsp kasuri methi (crushed)
• Salt to taste
• Handful chopped cilantro



Steps:
1. Heat oil in a wok or kadai. Add cumin seeds and let them splutter.
2. Add chopped ginger and green chilies. Sauté briefly.
3. Add cubed potatoes and salt. Cook covered until almost soft.
4. Add turmeric, paprika, kitchen king masala, amchur, and garam masala. Bloom the spices gently.
5. Add chopped green beans. Mix well to coat in spices.
6. Cover and cook on low heat until beans are tender, tossing occasionally.
7. Sprinkle crushed kasuri methi and fresh cilantro. Mix and serve.

• Roti or tortilla
• Plain quinoa or millet
• As a light, standalone meal
