Super Crispy Roast Potatoes

Always chose a floury potato such as Russet, Maris Piper, KIng Edward or any red skinned variety.
Par boiling the potatoes is essential, not cooking all the way but enough so that the outside of the potato will fluff up, then always allow them to steam dry for a few minutes. Then rolling them together in the dry pan will create the fluffy exterior that will crisp up perfectly when you roast them.
