3 Tasty & Easy Crispy Spring Roll Recipes: Vietnamese | Filipino | Cantonese

Update: A few people have commented and asked which wok did I purchase. I've purchased the wok at my local Asian market. The sun is out and it would be a good opportunity to do some cooking outside. I just bought a wok and thought I'd make some of my all time favorite spring rolls as the first dish. A pretty tasty snack as anything deep fried is good; and since they're quite easy to make, I thought I'd make a bunch and give some to friends and family to share together. My 3 favorite spring rolls are the Cantonese,Filipino, and Vietnamese styles. Each very unique and all very wonderfully crisp and tasty.

• Cantonese Chicken and Shiitake Mushroom Spring Roll
• Shiitake Mushrooms (6-8) + soaking liquid (2 cups)
• Bamboo Shoots (1 x 500g can)
• Chicken Cut into Strips (2 lbs)
• Egg white (1)
• Corn starch (1 tbsp)
• Light soy sauce (1 tbsp filling / 1tbsp chicken marinade)
• Dark soy sauce (2 tbsp)
• Oyster sauce (4 tbsp)
• Salt & white pepper
• Egg roll wrappers

• Filipino Lumpia (Lumpiang Shanghai)
• Carrots - small dice (2 cup)
• Onions - small dice (2 cup)
• Pork - ground mince (3 lbs)
• Serrano Pepper (1-2)
• Sugar (2 tbsp)
• Fish sauce (3-4 tbsp)
• Salt & black pepper
• Lumpia wrappers

• Vietnamese Spring Rolls (
• Carrots - shredded (1 cup)
• Shallots - small dice (1 cup)
• Wood ear mushrooms - soaked, washed and cut into chiffonade (3-4 pieces)
• Pork - ground mince (3 lbs)
• Eggs (3)
• Cellophane Noodles - soaked, drained, and cut (3-4 small bundles)
• Sugar (2 tbsp)
• Fish sauce (4-6 tbsp)
• Salt & black pepper
