Hey y'all! Happy Wednesday! Ok, so it's that time yet again! Episode #7 of the Vegan Rican!! I absolutely love sharing with you guys dishes and recipes that I grew up eating. This incredible stew is one that I had been dying to make, because it is just so PERFECT for these cold winter months. Sancocho is definitely one of those dishes that if your Puerto Rican you have had many times! And you know that this ishh lasts forever cause your mom makes a butt ton of it and well honestly it taste even BETTER the next day!
Ingredients **makes 4-6 servings

1 package of Beef-less tips
4 C of vegetable or vegan beef broth
2 C water
1 large green plantain(peeled and diced)
11/2 C of frozen yuca/cassava (thawed and diced)
1 large ear of corn (cut into 1in. pinwheels)
11/2 C pumpkin (peeled and diced)
1 large white potato (peeled and diced)
2 medium carrots (diced)
1 C white cabbage( thinly shredded)
Salt to taste
1/2 C fresh cilantro(chopped)
