A crispy and crunchy vrat-friendly treat filled with delicious flavors! Perfect for fasting or as an indulgent snack.

Ingredients:

For the Sabudana Tokri:
• 1 cup soaked sabudana (tapioca pearls)
• 1 medium boiled potato (mashed)
• 2 tbsp arrowroot flour or singhara (water chestnut) flour
• ½ tsp sendha namak (rock salt)
• ½ tsp black pepper powder
• Oil for frying

For the Chaat Filling:
• ½ cup boiled and diced potatoes
• ½ cup boiled chickpeas or peanuts
• 2 tbsp chopped coriander
• 1 tbsp pomegranate seeds
• ¼ tsp roasted cumin powder
• ½ tsp sendha namak
• 1 tbsp sweet curd
• Green chutney & sweet tamarind chutney as needed

Quick Steps:
1. Mix soaked sabudana, mashed potatoes, arrowroot flour, salt, and black pepper to form a dough.
2. Grease small steel bowls, press the dough inside them to shape like a basket, and deep-fry until golden and crispy.
3. Prepare the chaat by mixing potatoes, peanuts, and spices.
4. Fill the crispy baskets with the chaat mixture, drizzle curd, chutneys, and top with pomegranate seeds.
5. Serve immediately and enjoy the crunch!
