Resep Croissant
- 60gr Gula
- 500gr Tepung Terigu Protein Tinggi
- 10gr Garam
- 40gr Butter
- 250gr Air
- 50gr Krim (Dairy Whipping Cream)
- 14gr Ragi
- 250gr Dry Butter
How to:
1) Mixer tepung, gula, garam, dan ragi.
2) Campur dan tuang air dan krim.
3) Tambahkan butter, tidak perlu mixer hingga kalis.
4) Laminasi menggunakan dry butter menggunakan metode pelipatan Tunggal, lalu Ganda (Single, Double).
5) Tipiskan adonan hingga ketebalan 3mm.
6) Fermentasi selama 2-3 jam.
7) Poles menggunakan campuran telur dan susu sebelum pemanggangan.
8) Panggang di suhu 180C , api atas bawah selama kurang lebih 30 menit.
