iso mushroom wrap 🍄🟫
recipe (makes 1)
8-10 chestnut mushrooms
1 red onion
2 tsps dark miso
4 tbsps soy sauce
2 tbsps coconut yoghurt
2 tbsps tahini I used @vilgain ‘s
a small handful of chopped coriander
2 tsps pickled red cabbage
one wrap I used the @vilgain piadina wraps
salt & black pepper
olive oil
method: 🍄🟫🍄🟫
start by chopping your onion and mushrooms into small pieces. then make your miso dressing by adding the miso and soy sauce into a jar and give it a good shake if you feel like the consistency needs thinning add a splash of water.
next make your yoghurt base by simply mixing together tahini, coconut yoghurt and a pinch of salt.
now get a large saucepan on the heat and dry fry the mushrooms for a minute or so to draw out the water in them. then add some olive oil, red onion and fry for a further few minutes before adding your miso dressing. let this cook for a few minutes longer and season to taste with salt and black pepper.
finally dress up your wrap with the tahini yoghurt on the base, followed by the mushroom mix, coriander & pickled red cabbage. wrap your wrap up to your liking and enjoy 🍄🟫 #adventure
