Ingredients you'll need to make Simon Rimmer's Potato and Cauliflower Traybake:

1tbsp oil
1kg baby potatoes, halved
head of cauliflower, cut into florets
Salt and Pepper
1 onion, sliced
6 plum tomatoes
25mm piece ginger, roughly chopped
2 green chillies, roughly chopped
1 garlic clove, minced
1tsp mustard seeds
2tsp ground coriander
1tsp turmeric
2tsp ground cumin
2 tsp garam masala
A handful of chopped spinach
Bunch coriander
Bunch mint
2tsp sugar
75ml white wine vinegar
200g yoghurt
