The hidden arcade mode fights in Marvel Super Heroes Vs, Street Fighter and the first Marvel Vs. Capcom game are a weirdly poorly documented aspect of those games, at least on Youtube, so here's this video to rectify that.

You would not believe the amount of misinformation out on the internet on how to unlock those MvC1 fights. Shoutout to StrategyWiki for actually having the correct information there. Do note that the MSHvSF fights are only in the Japanese arcade & Sega Saturn releases of the game.
