Here are all the ingredients you'll need for this class:

DISH #1: Hearty Winter Greens Salad
8 C collard greens / kale / cabbage (Napa cabbage is a good one) / spinach
2 C seeds -- pumpkin (shelled) and sunflower are great, and you can buy both or either. Plus sesame seeds (black, brown or white all ok) and flax and chia seeds are good in the mix too, whatever you can find
1 oz fennel seeds
1 oz cumin seeds
1 oz Aleppo and or Urfa chili ideally, but other chili powders will work too

Vinaigrette #1 - Cider Sesame Lime:
6 limes
3 TB apple cider vinegar
1 TB soy sauce
1 TB honey
1 TB fish sauce
1 TB sesame oil
4 oz olive oil
4 oz peanut, canola, or sunflower oil

Vinaigrette #2 - Tahini:
1 clove of garlic
1/4 C. tahini (sesame paste) or alternatively you can use peanut butter or other nut/seed butter
1/2 tsp cumin
1/4 tsp fennel
1 lemon
1 lime
chili flakes
1/4 C water

DISH #2 - Carrots and Legumes:
1 bunch carrots (rainbow if possible)
1 C lentils / mung beans / black eyed peas (if using dried black eyed peas, soak in water overnight)
1 onion
2 cloves garlic, minced
1 TB ginger, minced
1 tsp Masala curry spice mixture
1/4 tsp cayenne
1/2 tsp cumin
1/2 tsp fennugreek
1 tsp powdered turmeric
2 TB ghee or coconut oil

For the Vinaigrette:
1 lemon
2 oranges or 2-3 tangerines
3 TB white wine vinegar
1 twp orange flower water (optional)
2 tsp honey
1/4 tsp Cardamom
1/2 C olive oil, or other oil such as canola

For Finishing:
1/2 C cashews
2 TB ghee
3 TB unsweetened coconut flake
cayenne
mint
cilantro

DISH #3: Chopstick Noodles

Lo Mein Noodles:
430 g. bread flour
pinch salt
2 eggs
120-150 ml. water
1 tsp. oil

Sichuan Chili Oil:
1 C peanut oil
1 C canola oil
2” piece of ginger, sliced
2 garlic cloves, lightly crushed
3 whole star anise
1 pc cinnamon stick
2 bay leaves
2 black cardamom pods
4 white cardamom pods
1 C Sichuan or Korean chili flake
1/2 C white or brown sesame seeds
1/2 C black sesame seeds
2 tsp red Sichuan peppercorn
2 tsp green Sichuan peppercorn
1 TB fennel seeds
1 tsp Chinese five spice
1 TB fermented Chinese black bean (optional)

Additional Ingredients:
1 C roasted red skin peanuts
1 C soy sauce
1/4 C sugar

Note: You can also add black vinegar, crispy shallots, and/or crispy garlic if desired.
