Valentine's days dessert: Duo of Ice cream with meringue & raspberry sauce

In France we call that dessert the Vacherin glace and it is served in the form of a cake rather than an individual portion. that meringue and ice cream dessert recipe is not hard to make and if you don't want to make the meringues, you can just buy them ready made. in a nutshell it is basically a duo of ice cream sandwiched between two slice of french meringues served with raspberry sauce and decorated with whipped cream and fresh fruits. its old french classic that deserved to be tasted.

If you want to make that valentines dessert the traditional way then you will have to make the sorbet and the vanilla ice cream from scratch.

Ingredients needed for 4 to 6 serving depending on the size of the Meringues:

for the French meringue:
4 egg whites
250 gram of caster sugar
a pinch of salt.
the meringue has to cook for at least 1 hour at 100 c (212 F)

for the Raspberry coulis:
250 grams of fresh raspberry
80 grams of icing sugar
the juice of half a lemon or lime

For the Whipped cream with Mascarpone:
250 ml of pure cream (heavy cream)
100 grams of Mascarpone
30 grams of caster sugar

to decorate:
fresh fruits, mint leaves and eventually chopped pistachios
