In a large measuring cup, whisk together the buttermilk, hot sauce, paprika, salt and pepper. place the chicken pieces in a large bowl, pour the buttermilk all over the top. Cover it with a plastic wrap and keep it in the fridge for an overnight. Take the chicken out before 45 mins of cooking, for getting it to the room temperature. Place a cooling rack on a large baking sheet. In a shallow bowl, mix together the flour, onion, garlic, salt and pepper. Using tongs, take each piece out of the buttermilk off as you can. Dredge each piece well in the flour and place it on the baking rack topped baking sheet. Let the chicken sit at the room temperature for about 20 mins. And place it in the fridge. Place enough oil in a cast iron skillet, to come halfway to the sides of the skillets and allow the oil to come up to the temperature at about 350 degrees F. Now take the chicken out of the fridge 10 mins before frying. Add a few pieces of chicken at a time. (skin side down) and let them cook for 4-5 mins or until golden brown and crispy. Meanwhile make sure to preheat the oven to 375 degrees. Place the wire rack on the baking sheet and place the cooked chicken on the top. Put them in the oven and let them cook for 10-15 mins. trust me this recipe will get you the most moist, crispy and juicy chicken ever!
