Desi Style Cottage Pie
Desi Style Cottage Pie
This is one of my most requested recipes… and it’s not traditional at all. Obviously had to add spices … and a shortcut by using Woolies frozen mashed potatoes which by the way is super convenient and tasty!
INGREDIENTS
- 500g mince (lamb or beef)
- 1 heaped tsp crushed garlic
- 1 tsp dried mixed herbs
- Salt & pepper
- 1/2 tsp cumin powder
- 2 tsp chilli powder
- 1 diced onion
- 50g tomato paste
- 1 large diced carrot
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- 1 1/2 cup stock (I used chicken)
- 1 tbsp butter
- 3/4 cup milk
- 500g mashed potatoes
- Handful fresh parsley
METHOD
1. Heat oil and cook mince with garlic, dried herbs, salt and pepper until colour starts to change.
2. Add cumin, chilli powder and onion, cook until soft.
3. Stir in tomato paste, carrots, thyme and rosemary.
4. Pour in stock and simmer low until mince is cooked and rich.
5. Heat butter and milk, then mix into mashed potatoes. Stir in parsley.
6. Spoon mash over mince and create texture with a fork.
7. Bake at 180°C for 15–20 minutes until golden and crispy.
8. Finish with parsley and serve warm.
