For todays cooking video I will be showing you how I made Birria QuesaTacos with the consome dip for the first time….and it came out bomb!!! I had these tacos in LA for the first time at sister James’ house and I fell in love with them. The style if very popular in LA because of the diverse communities and strong Spanish presence but anyone can honestly make this. Some people make their Birria in a crock pot or cook it on a stove but that takes HOURS so i decided to use my instant pot and it cooked it in 35 minutes!!!! So today im showing you how to make Birria Quesatacos with Consome dip in your own house, I hope you enjoy this video and lemme know what you think.

Recipe:

- 1/2 Onion (dice)
- Cilantro (leaves only)
(Dice onion and cilantro leaves)
- 2 ancho chilis
- 3 Californian chilis
- 5 chile de árbol
(Cut stems, remove seeds and rinse)
- 2 cups of water
(Boil chilis for 15 mins)

(Blend chilis together and add:
- 1 chipotle pepper in adobo sauce
- 1 cup of water (from pot)
BLEND

(Brown meat for 1 minute (30/30sec) on med/high heat
- Beef shanks
- Olive oil
ALTERNATIVE MEAT: CHUCK ROAST

INSTANT POT:
- Add Meat
- Diced onions
- Pour salsa
- 2 tbsp beef bouillon
- 2 bay leaves
- 2 teaspoon oregano
- 1 tsp thyme
- 2 carrots
- 1/4 tsp cinnamon
- 1/4 tsp ground cloves
- 1 tsp salt
- 2 tbsp minced garlic
- 1/2 tsp pepper
- 4 cups of water

Mozzarella Cheese
Corn Tortillas
