Beans & Potatoes Stew with Curry Coconut Rice 🍛

🫘 For the Beans & Potatoes Stew

Serves 4–5

Ingredients:

400 g aduki beans (or any red beans of your choice)

16 small potatoes, chopped into small pieces

1 large onion, finely chopped

3 large tomatoes, chopped

5 cloves of garlic

A small piece of fresh ginger (about one-third the amount of garlic) — pounded together into a paste

1 tbsp mixed spices (or your usual stew seasoning; salt and pepper alone still give great results)

1 bundle of spring onions, chopped into small pieces

1 green paprika (green bell pepper), chopped into small pieces

Salt to taste

🍚 For the Curry Coconut Rice

Ingredients:

350 g Jasmine white rice (or any rice of your choice)

1 tbsp coconut oil

1 tbsp curry powder

Salt to taste
