海南鸡饭 | Hainanese Chicken Rice
食材:
鸡一隻蒜头6辦
胡椒粒少許
盐少许
一鍋水
油飯材料:
米2杯
鸡精块 1 块
香草2片搅拌机搅打成香草汁
薑15g锤成薑泥按压成三汁备用
蒜头20g锤成泥
黄瓜1条配飯吃
辣椒酱材料:
辣椒3条
小米辣4条
酸柑1粒
糖1大汤匙
盐半茶匙
蒜头6瓣
幼薑1小塊
做法:烧一鍋沸水加入薑2片,用沙包裝入胡椒粒蒜头3辨煮沸后,拿著整隻鸡头放入川烫了又拿起,川烫又拿起从复3次,第四次整隻鸡放入關火,净泡到20分鸡就熟了,在淨泡时,先調醬油,蚝油,麻油調好备用是要淋上鸡肉的,先鍋油炒香蒜末加入米盐,鸡精塊,薑汁,蒜泥调味炒香,倒入电饭锅里,加入鸡汤上面那层油和鸡汤,鸡汤腌过米有半寸高,加入香草汁和香草,放入电饭煲开电煮成鸡飯,鸡拿起放入冷水浸泡,鸡汤可放入菜煮汤了,可隨意各人喜欢别类菜也可以,煮成汤后,鸡可拿起剁成块排盘,調好的醬油汁可淋在鸡肉上,就可上桌了

#海南鸡饭油饭材料要香
Ingredients:
1 whole chicken
Few slice of ginger
6 clove of garlic
Few pepper
Pinch of salt
1 pot of water
Seasoning for chicken:
Soy source, sesame oil & oyster source
Rice:
2 cup rice
2 pieces of pandan leaves
2 pieces of pandan leaves (blend and take only the juice)
1 piece of chicken stock
15g of ginger (blend and take only the juice)
20g blended garlic
Cucumber to serve with rice
Chili source:
3 chilies
4 bird's eyes chilies
1 lime
1 soup spoon of sugar
1/2 tea spoon of salt
6 clove of garlic
1 piece of ginger
Recipe:
1) Boil a pot of water with 2 piece of ginger, pepper and garlic.
2) Put in whole chicken into the hot water, take out, repeat for 3 times.
3) Off the fire, soak the whole chicken in the pot for 20 minutes
4) Mix soy source, oyster source and sesame oil.
5) Heat the wok, fry minced garlic, add in rice, salt, chicken stock, ginger juice till fragrant.
6) Pour into rice cooker, add in chicken broth from the water used to cook the chicken to about half inch above rice.
7) Add in pandan leaves and juice and on the rice cooker.
8) Remove chicken from the pot, soak into cold water.
9) You may add some vegetable into the broth and turn it into vegetable soup.
10) Cut the whole chicken into small pieces, pour in sesame oil, soy source and oyster source for seasoning.
11) Sliced some cucumber to serve it together with the chicken or on your rice.
12) Hainanese chicken rice is ready to serve once the rice is cooked.
