Rainbow Swiss chard is one of the most colorful and nutrient-dense vegetables hiding in plain sight at the grocery store. Its deep-green leaves and brilliant red, yellow, orange, pink, and white stems provide a powerful combination of vitamin K, beta-carotene, vitamin C, magnesium, potassium, natural nitrates, fiber, lutein, zeaxanthin, betalains, flavonoids, and other beneficial plant compounds. Swiss chard is naturally high in vitamin K, so anyone taking warfarin should keep their intake consistent and speak with the healthcare professional monitoring their medication. It also contains oxalates, but most healthy people eating a normal portion as part of a varied diet do not need to fear this nutritious vegetable. People with a history of calcium-oxalate kidney stones who have been advised to limit oxalates may reduce some of the soluble oxalates by boiling the Swiss chard and discarding the cooking water.
