How Japanese People Celebrate The New Year! Toshikoshi Soba!!

Toshikoshi Soba is the traditional Japanese noodle dish I grew up eating for New Year's Eve. The earthy buckwheat noodles are symbolic for biting into the previous year and the long noodles represent long life ahead.

In this video I attempt to make the noodles and dashi (dipping soup) from scratch.

DASHI STOCK
1 Large piece of Kombu, soaked overnight in 4 cups of water then, brought to almost boiling
Discard Kombu
Add 1 cup of katsuoboshi (bonito fish flakes)
Bring to boil and let sit for 10 minutes
Strain
Add 2 Tablespoons Soy Sauce
Add 2 Tablespoons Sake
Add 1/2 teaspoon kosher salt
Add 2 Tablespoons Mirin (Japanese cooking wine)
Boil

SOBA NOODLES
2 Cups of Buckwheat flour
1/2 Cup All Purpose Flour
Sift!
Add 3/4 Cup Water
Knead, add flour or water to tweak consistency
Dust cutting board with tapioca flour
Roll dough flat
Cut noodles with a sharp knife or, use a pasta machine
Boil 30 seconds and wash noodles to remove excess starch.
