Scratch Homesteading Meals - Home Raised Pork - Large Australian Family - Nourishing Freezer Fudge

Today we roast up a cut of our home raised Duroc x Saddleback pork, serve it with applesauce, gifted homegrown pumpkin and homemade pan gravy, reflect on seasonal change around the farm and whip up a super quick, easy and filling peanut butter maple freezer fudge.

Peanut Butter Maple Freezer Fudge

Beat together 2 cups of smooth peanut butter, 1/2 cup of pure maple syrup, 1/2 cup of melted coconut oil, 1 teaspoon of sea salt and 1 teaspoon of vanilla extract until thick and glossy. Optional cacao topping - 1 tablespoon melted coconut oil mixed with 1 tablespoon cacao powder. Pour over top and decorate with knife or skewer.
Spoon into a parchment paper lined dish and place in the freezer until firm - about 1 hour. Try not to eat it all at once!
