Now, these days, I haven't really been watching anime. Life and other stuff get in the way, so there is simply no time. But I will always look fondly back to my carefree days when I was watching the early episodes of Naruto after school. Now that the series is over, I decided it was time to pay my respects by remaking (or making my version of) Ichiraku Ramen from Naruto!
I did my research, and it seems that Ichiraku Ramen is a miso pork style Ramen soup. Since a few other people have done this recipe with pork bone stock, I decided to go with chicken stock, and then add pork mince with different fragrant vegetables before adding the chicken stock and miso. I gotta tell you, this tasted exactly like I always hoped it would taste while I was watching Naruto at a younger age! I remember always wanting to try it, and now I finally had my chance. I really hope that you will give this recipe a try!
Otoshibuta, which works as a lid for chashu, is actually made of tree. But if you don't have one, you can make one yourself! Simply shape the aluminium foil to cover the diameter of the pot, and poke a hole in it so it can steam well. I made mine a little small, but it got the job done!
YOU NEED:
Ramen Egg:
Eggs
Mirin
Soy sauce
Water
Chashu:
Pork Belly
Soy sauce
Mirin
Sake (Optional)
Ginger
White part of Japanese Negi (Japanese scallion)
Sugar
Water
Japanese Chicken Stock:
Chicken wings
Negi
Ginger
Salt
Pepper
Water
Miso Ramen Soup:
Miso
Japanese Chicken Stock
Minced pork
Oil
Onion
Garlic
Ginger
La DOUBANJIANG (Chinese chilli bean paste)
How to make ramen noodles:
You have to make alkaline water (kansui) which you can make by baking baking powder and mixing with water. This makes the flour you mix it with yellow and the noodles the same texture as ramen noodles should have. I recommend not hand cutting ramen, but rather using a pasta machine.
Ichiraku Ramen Bowl:
Naruto (Fish cake)
Nori (Sea weed)
Fresh ramen noodles
Ramen egg
Chashu
Miso ramen soup
Spring onion
DONE!
