Mexican Chicken and Rice
Best thing about this recipe is that you can really add anything you want to it.

Ingredients
- 2 or 3 Boneless Chicken Breasts cut into cubes (We usually use 3 small or 2 medium sized)
- 1 packet of taco seasoning
- 1.5 cups of uncooked rice (we use long grain)
- Peppers chopped finely (I used an entire red and orange last night - can use green or yellow too)
- 1 onion (chopped finely)
- 1 can of diced tomatoes
- 1 can of mushrooms or fresh mushrooms (optional)
- 1 Jar of Salsa
- Half a tub of Sour Cream
- Cheddar/Mozarella Cheese
- Tortilla Chips (optional)

Also optional (the recipe calls for this but I don't add it) corn and black beans.

Directions:
Cook rice per instructions.

In a deep skillet, cook cubed chicken breasts until completely cooked. Add taco seasoning and stir per package instructions.

After that has cooked for a few minutes, I add all the veggies (peppers, onions, mushrooms, tomatoes, beans, corn) to the chicken mixture.

Once your rice has cooked (I don't mind leaving it a bit hard because it goes into the oven and cooks a bit in there) add it to your chicken and veggie mixture. You need a deep skillet for this because it does get pretty full.

Stir everything together. Add in the jar of salsa (we use a tall jar) and half a tub of sour cream. Stir.

Once everything is combined, put ingredients into a casserole dish. This casserole will be liquidy, but that's optimal for left overs as the rice tends to soak up the moisture the following day. (note that this makes a very large quantity.. if you want less, cut down on the rice)

Flatten everything out and sprinkle grated mozarella and cheddar cheese on top.

Put in the oven on 350 for 30-40 minutes or until the top is brown.

After each serving has been served, crush up tortilla chips to put on top of each dish. This way the chips don't go soggy for left overs.

Easy spicy peanut chicken:
2lbs boneless skinless chicken breast
1/2 cup House Tsang Spicy Szchwan Sauce (at Wal-Mart)
1 cup crunchy peanut butter
1tbsp minced garlic
1tsp minced ginger
Salt & Pepper

Add it all to the crock pot on low for 6-7ish hours. Shred and serve over hot buttered rice and top with crushed peanuts.
