Ube Cheese Sago
Ube Cheese Sago Recipe
Ingredients:
3 cups Tapioca Pearl Sago (cooked, rinsed, and cooled)
1/4 cup Brown Sugar
2 cups Water (for browning the sago)
1 cup Ube Halaya
2 cans (410ml each) Angel Kremdensada (or 1 cup Condensed milk and 2 cups All-Purpose Cream)
2 cups Nata de Coco (drained)
1 cup Macapuno
1/4 cup grated Cheese
1 1/2 tsp Ube Extract
1 tsp Vanilla Extract
Ice cubes (optional when serving)
Instructions:
1. Brown the sago:In a small pot, combine 1/4 cup brown sugar and 2 cups water. Simmer the cooked sago in this mixture for 3–5 minutes to absorb the color and flavor. Cool completely.
2. Make the ube cream base:In a large mixing bowl, whisk together ube halaya, Angel Kremdensada, ube extract, and vanilla extract until smooth and creamy.
3. Add mix-ins:Fold in the browned sago, nata de coco, macapuno, and grated cheese. Mix gently until well combined.
4. Chill and serve:Refrigerate for at least 1 hour. Serve in chilled cups with ice cubes if desired. Stir before serving.
