How To Make Kachchi Biriyani At Home

Ingredients:
1 ½ kg mutton
1 ½ tbsp salt
2 tbsp vinegar
2 mace blades
¾ nutmeg
3 small cinnamon sticks
2 black cardamom
6 cardamom
1 ¼ tsp white pepper
1 cup plain yogurt
1 ½ tbsp garlic paste
2 tbsp ginger paste
1 ½ tsp red chili powder
¼ cup ketchup
¾ cup fried onions
3 tbsp powdered milk
1 ghee tbsp
1 tbsp kewra water
½ tsp salt
1 tsp sugar
4 medium potatoes
¼ tsp food colour
3 bay leaves
2 small cinnamon sticks
5 cardamom
7 cloves
1 tsp caraway seeds
1 ½ tbsp salt
4 cups basmati rice
½ cup fried onions
8-10 green chilies
6 prunes
4 tbsp mawa
1 ½ tbsp kewra water
1 tsp rose water
1 cup milk
3-4 tbsp ghee

Instructions:
1. Soak mutton in water with salt and vinegar
2. In a pan, dry roast mace, nutmeg, cinnamon sticks, cardamoms, and white peppercorn
3. Blend the roasted spices and pour it into a bowl
4. Add yogurt, garlic paste, ginger paste, red chili powder, ketchup, and fried onions
5. Mix in the mutton and add powdered milk, ghee, and kewra water
6. Marinate for 1 hour
7. In a pan, drizzle cooking oil, add salt, sugar, and potatoes coated in food colour
8. Pan fry the potatoes until lightly brown then remove from heat
9. In a large pot with water, add bay leaves, cinnamon sticks, cardamom, cloves, caraway seeds, and salt to taste
10. Bring water to boil and add soaked basmati rice
11. Cover with lid and cook for 4 ½ minutes
12. Place the marinated mutton in a large pot, layer it with potatoes, fried onions, green chilies, prunes, mawa, basmati rice, kewra water, rose water, milk, ghee, and food colouring
13. Seal the pot with atta
14. Cook for 10 minutes on high heat then cook for 1 more hour on low heat
15. Mix well before serving
16. Ready to enjoy!
