沙茶粉絲蝦煲(精華教學)
材料:
📌鮮蝦12隻
📌蝦米
📌薑片
📌蔥頭
📌粉絲
📌芹菜
醃料:
📌沙茶醬 – 1.5湯匙
📌鹽
📌蠔油
📌麻油
做法:
1. 熱獲下油爆香薑片蔥頭,再放入鮮蝦煎至轉色,放沙茶醬,再大火煎1分鐘取出備用。
2. 用餘下醬汁爆香蝦米和剩餘薑蔥,放入粉絲,大火炒勻至乾身。期間放入蠔油,芹菜,鮮蝦,用筷子炒勻,倒進砂煲。
3. 準備砂煲,開小火,用金菇菜墊底,放少許鹽,放入步驟2的粉絲和蝦,鮮蝦鋪面,倒進少量麻油。完成!
Sacha Shrimp and Vermicelli Clay Pot
Ingredients:
📌 12 fresh shrimp
📌 Dried shrimp
📌 Ginger slices
📌 Scallion bulbs
📌 Vermicelli noodles
📌 Celery
Marinade:
📌 Sacha sauce - 1.5 tablespoons
📌 Salt
📌 Oyster sauce
📌 Sesame oil
Instructions:
1. Heat oil in a clay pot and sauté the ginger slices and scallion bulbs until fragrant. Add the fresh shrimp and fry until they change color. Add the sacha sauce and continue frying on high heat for 1 minute. Remove from heat and set aside.
2. In the same clay pot, sauté the dried shrimp and the remaining ginger and scallion. Add the vermicelli noodles and stir-fry on high heat until they are dry. During this process, add oyster sauce, celery, and the cooked fresh shrimp. Stir-fry with chopsticks to combine well. Transfer the mixture to the clay pot.
3. Prepare the clay pot by placing a layer of enoki mushrooms at the bottom. Sprinkle a pinch of salt and add the vermicelli and shrimp mixture from step 2. Arrange the fresh shrimp on top and drizzle a small amount of sesame oil. Done!
