OXTAIL KARE-KARE
================

Oxtail Kare-Kare is a signature Filipino dish made with boiled and tenderized oxtails in a savory peanutbutter sauce and topped with assorted cooked vegetables. Normally it is any beef part (or sometimes pork or chicken) but the Oxtail by far is the most flavorful perhaps because of the bones and fats in the oxtail make for a great beef broth when the oxtails are boiled and tenderized. Traditionally also ox tripes (or beef honeycombs) are added together with the oxtails. But if you don't like ox tripes, you can certainly skip it altogether.

This recipe is also (to my mind) simple to make because components are cooked separately. And the procedures are simple, you'd be surprised.

BEST KARE KARE RECIPE!

Preparing the Meats:
=================
(This is for a big batch so just adjust accordingly)

6 lbs Oxtails
2 lbs Ox Tripe
2-3 Onions (large or medium-sized)
Salt, Pepper, Garlic Powder to Taste
2 Beef Cube (Buillion)

1. Place oxtails in a pot and fill with water. Add salt, pepper, garlic powder to taste. Add 2-3 peeled onions (cut in half) and 1 beef cube or beef buillion to amp up the flavor. Boil for 2-1/2 hours or until oxtails are fork tender.
2. Place ox tripes in a pot and fill with water. Add salt, pepper, garlic powder to taste. Add 1 beef cube for flavor. Boil for 1-1/2 to 2 hours or until ox tripes are for tender.
3. When done, cut the oxtripes into small bite-sized pieces.
4. When already ready to cook the kare-kare sauce, separate the oxtails from its broth. Set aside the oxtail broth because we are going to use it in making the sauce.

Prepare the Sauce:
===============
4 tbsp (or 40g) Annatto Seeds
1-2 cups olive oil
1-1/2 cup (or 360g) Creamy Peanut Butter
About 4-5 cups of oxtail broth

1. Heat olive oil in a small pot. When already hot, add the annatto seeds and quickly turn off the heat. Let the residual heat extract the red color from the annatto seeds. Set aside.
2. In a large pan, strain the annatto oil and pour about 1 cup or so of the annatto oil into the large pan. Make sure there are no annatto seeds that will be included. Use only low to medium heat so as to avoid burning the peanut butter later.
3. Add peanut butter into the oil and keep stirring until the peanut butter is creamy and there are no lumps anymore.
4. Add oxtail broth slowly one at a time. Keep stirring until the desired texture and consistency of the kare-kare sauce is achieved.
5. Add in the already cooked and tenderized oxtails and ox tripes. Let meats simmer in the sauce for about 10-15 minutes.
6. Set aside.

Prepare the vegetables:
===================
You can use as many vegetables as you like. Good thing about our procedure is that we cook the vegetables separately so it does not affect our kare-kare sauce and meats. So the amounts of the vegetables will depend on how much vegetables you want to add to the dish.

Vegetables you can use: Green Beans, Eggplant, Cabbage (you may add Banana Blossom or Bokchoy too)

1. In a pan add some oxtail broth. Heat the broth in medium to high heat.
2. Add the green beans first and cook for about 5 minutes or until it is about half cooked.
3. Add the eggplant. Make sure also to cover the pan with a lid so that the steam will cook the vegetables faster and more thoroughly.
4. When eggplant is about half-cooked, add the cabbage.
5. When the cabbage is already cooked, turn off the heat and set aside.

Plating the kare-kare:
==================
So you already have your kare-kare meat and sauce ready as well as your vegetables which were cooked separately. Just place the kare-kare meats/sauce in a serving dish and top it with as much vegetables as you like. Then have ready some sauteed shrimp paste or bagoong which almost all kare-kare servings must have. These are readily available is any Filipino grocery store or maybe in some Asian Food Markets.

Good thing about our procedure is that we cook components separately so each component (the meats, sauce and vegetables) as cooked perfectly before we combine them together. This also makes this recipe more simple and easy to make.
