SMOKED TAWA CHICKEN RECIPE

INGREDIENTS
First Marination
• Chicken Boneless 1 kg
• Salt 1/2 tbsp
• Black pepper powder 1/4 tbsp
• Garam Masala 1/4 tbsp
• Coriander powder 2 tbsp
• Cumin powder 1 tbsp
• Vinegar 2 tbsp
• Garlic paste 1 tbsp
• Ginger paste 1 tbsp
• Yogurt 1/4 cup
• Red chili powder 1/2 tbsp
Second Marination
• Yogurt 1 cup
• Fresh Cream 1/2 cup
• Salt to taste
• Red chili powder 1/2 tbsp or to taste
• Turmeric powder 1/2 tbsp
• Garam masala 1/2 tbsp
• Coriander powder 3/4 tbsp
• Cumin powder 1/2 tbsp
• Chat Masala 3/4 tbsp
• Dried fenugreek 1 tbsp
• Fresh mint chopped 2 tbsp
• Fresh coriander chopped 4 tbsp
Other ingredients
• Oil few tbsp
• Lemons 2-3
• Green chilies 2-3
• Ginger 2-inch piece julienned
• Fresh mint
• Fresh coriander
• Live charcoal and some oil
PREPARATION
1. Clean, wash and make deep incisions on the chicken pieces as shown in the video.
2. Marinate with all the ingredients mentioned under “First Marination”. Keep in the fridge for 30 minutes.
3. Meanwhile, make the “second marination” by mixing all the mentioned ingredients.
4. Heat oil on a tawa and add marinated chicken pieces. Allow to cook until all the chicken is cooked through.
5. Add some chopped green chilies and julienned ginger. Chop the chicken using a spatula into bite sized pieces.
6. Add lemon wedges to the chicken and pour the second marination over the chicken and mix.
7. Cover and cook for 10-15 minutes on low flame or until the excess water has dried up and yogurt has cooked.
8. Smoke the chicken by pouring some oil over a live charcoal and covering the tawa until the smoke goes away.
9. Succulent and tender smoked tawa chicken is ready. Garnish with mint, coriander, ginger and chilies and serve immediately with roti, paratha or naan. Enjoy!

MATAR K CRISPY PAKORAY (PEAS PAKORAY RECIPE/ PEAS FRITTERS)

Ingredients
• Fresh green peas, 2.5 cups, lightly blanched
• Coriander leaves 1 big bunch or 1/2 cup
• Garlic cloves 3 big
• Green chilies 2-3 (you may add more if you prefer spicy)
• Cumin powder 1 teaspoon
• Gram flour (Besan) 1.5 cup
• Onion 1 big, sliced
• Salt to taste
• Oil for frying
Preparation
1. In a chopper add fresh coriander, green chilies and garlic and chop.
2. Now add green peas, in it and pulse it to a coarse mixture. Do not make a fine paste. We need chunks of peas to make the pakoras crunchy.
3. Transfer the mixture in a bowl.
4. Add salt, cumin powder and sliced onions. Mix well.
5. Add gram flour (besan) and add water little by little to make a thick mixture.
6. Heat oil in a wok.
7. Once the oil is hot, reduce the heat to MEDIUM HIGH.
8. Gently add the pakora mixture with the help of a spoon and fry until golden and crisp.
9. NOTE: Frying on very high heat with burn the pakoras from outside and leave them uncooked from the inside.
10. NOTE 2: Frying on very low flame will result in pakoras that have absorbed a lot of oil. Therefore, the perfect flame for frying pakoras is medium to high.
11. Take out the fried pakoras onto a kitchen towel.
12. Repeat the same for the complete pakora mixture.
13. Serve them hot and crisp with raw imli chutney.
