Maple Bacon Cupcakes
This sweet treat is perfect to make with your family this weekend. Try this easy maple bacon cupcake recipe!
Ingredients:
-- 1 (15.25-oz) pkg yellow cake mix
-- 2 eggs
-- 1/2 cup bacon grease
-- 1 (6-oz) pkg French vanilla yogurt, like Yoplait
-- 1 cup water
-- 12 slices bacon, cooked crisp and crumbled
-- 1 (8-oz) pkg cream cheese, softened
-- ¼ cup butter, softened
-- 2 Tbsp maple syrup
-- 2½ cups powdered sugar
-- Whole Pecans
Directions:
-- In a large bowl, add the cake mix, eggs, bacon grease, yogurt and water and stir to combine. Fold crumbled bacon into the cupcake batter.
-- Line muffin pan with liners and fill with cupcake batter. Bake the cupcakes according to the package directions.
-- When the cupcakes are done, remove from oven and let cool for about 2 to 3 minutes. Then take the cupcakes out the muffin pan by the tabs on the silicone liners. Allow them to cool completely.
-- Meanwhile, make the frosting. In the bowl of an electric mixer with paddle attachment, beat together cream cheese and butter until light and fluffy.
-- Beat in the maple syrup. Slowly add the powdered sugar until fully incorporated.
-- Once the cupcakes are cool, fill the cupcakes with a little bit of the maple syrup by inserting a narrow pastry bag tip an inch through the top of cupcakes.
-- Then pipe your frosting on the cupcakes.
-- Top with whole pecans and bacon crumbs
