Carrot cake with cream cheese frosting recipe | how to make carrot cake ||

Ingredients:

200g grated carrots

125g all-purpose flour

125g granulated sugar

2 large eggs

1/2 cup vegetable oil

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

For the cream cheese frosting:

125g (1/2cup) cream cheese, softened

120gm (1/4 cup) unsalted butter, softened

130gm (1 cup) powdered sugar

1 tsp vanilla extract

pecan nuts 100gm

Directions:

Preheat your oven to 350°F (180°C). Grease a 6-inch round cake pan and set aside.

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt.

In a separate bowl, beat the eggs with the sugar until pale and fluffy.
Add in the vegetable oil and grated carrots, and mix until well combined.

Pour the dry ingredients into the wet ingredients and mix until just combined.

Pour the batter into the prepared cake pan and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

While the cake is cooling, make the cream cheese frosting.

Cream Cheese Frosting:-

In a bowl, beat the cream cheese and butter together until smooth. Add in the powdered sugar and vanilla extract, and beat until well combined and fluffy.

Note: This recipe makes a small cake that serves about 4-6 people. If you need a larger cake, simply double or triple the ingredients.
Cream cheese icing .

Instructions:

Place one layer of the carrot cake on a cake plate or stand.

Using a spatula, spread a layer of cream cheese frosting on top of the first layer of carrot cake, covering the surface evenly.

Place the second layer of carrot cake on top of the frosting and press gently to ensure it sticks to the frosting.

Repeat step 2 by spreading another layer of cream cheese frosting on top of the second layer of carrot cake.

Place the third and final layer of carrot cake on top of the frosting and press gently to ensure it sticks to the frosting.

Apply a thin layer of frosting on the sides of the cake using a spatula to create a crumb coat. This will help the final layer of frosting stick better.

Spread a thick layer of cream cheese frosting on top of the cake, starting at the center and working your way outwards.

Use a spatula to smooth the frosting on top of the cake and around the sides.

If desired, you can use a piping bag and decorating tip to pipe additional frosting onto the cake for decoration.
