One Tray, Maximum Flavor 😍
Baking Tray Roast 🍗
For the chicken:
- 1 chicken butterflied
- 1 lemon (half for juice, half for decor)
- 2 cloves of garlic finely minced
- 2tbsp olive oil
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
For the roast vegetables:
- 1/2 butternut pumpkin cut into pieces
- 1 bag of potatoes cut into halves
- 1 Parsnip cut into pieces
- Duck fat
For the yorkshire puddings:
- 140g of plain flour
- 4 eggs
- 200ml of milk
- Canola oil
Method:
1. Preheat the oven to 200 degrees celsius.
2. Combine chicken, the juice of half a lemon, garlic, thyme, rosemary and olive oil in a bowl until evenly covered. Place onto the Crumble baking sheet and top with thin slices of lemon. Bake in the oven for 25 minutes per 500g of chicken.
3. Parboil the potatoes in the Crumble baby saucepan until a fork can easily pierce the potato. Drain the water, place the lid ontop, and fluff the potatoes by shaking the saucepan.
4. Add 1tbsp of duck fat into the Crumble deep baking tray and place in the oven for two minutes. Take out of the oven and add all vegetables to the pan in a single layer. Place in the oven and cook for 20 minutes. Remove and flip the vegetables, and cooking for another 20 minutes.
5. Pour a thin layer of oil into the Crumble muffin tray and place in the oven for five minutes. Meanwhile, combine flour, eggs and milk in a jug and whisk until smooth.
6. Remove the muffin tray from the oven, and immediately pour yorkshire pudding batter into the tray (filling quite close to the top).
7. Place in the oven and bake for 15 minutes, or until risen and golden brown.
8. Serve with gravy and enjoy!
