Keto Buttermilk Biscuits|Low Carb Staple|Nadia L
In search of any low carb staple? Well, this keto buttermilk biscuit is very good for both savory and sweet dishes. It's not only delicious with America's Southern cuisine, but also goes surprisingly well with many Asian dishes. It becomes one of my favorite staples in my keto diet.
Tips to make successful keto biscuits are not only right ingredients, but also proper techniques and efficiency in process.
We need to work very fast, keep the butter and the dough very cold, and bake it in high heat. Not much kneading needed. Give it a try, You’ll enjoy it!
DRY INGREDIENTS (313g)
200g (2 cup) almond flour
100g (⅔ cup) buttermilk powder
4g (2 tsp) xanthan gum
4g (2 tsp) baking powder
4g (1 tsp) baking soda
1g (¼ tsp) sea salt
WET INGREDIENTS (260g)
80g (6 tbsp) butter
60g (4 tbsp) yogurt / buttermilk / sour cream
120g 2 eggs
Yes, I use 100g of buttermilk powder in my recipe, and in nutrition, it contains 48g of carb in each 100g of buttermilk powder. This recipe makes 8 biscuits, it contains 6g of carb from buttermilk powder in each biscuit.
(1) Considering "daily maximum of carb intake", different standards no matter it’s
* 50~60g, or
* 20~30g, or
* 1~5g,
Having 1 biscuit from this recipe per day is still keto-friendly to me.
(2) Also, I'm very particular about the "biscuit texture", I’ve tried many keto biscuit recipes,
* some are eggy or coconut-ie in flavor,
* some are cakey or muffin-like in texture;
* or too moist without flakiness.
Buttermilk powder is the one I tried which gives the body, flavor, and texture the most similarity to a traditional buttermilk biscuit made from wheat flour.
Above I hope it gives you more ideas on why I developed this recipe and how much I like the result. You definitely can try putting less buttermilk powder to an amount which you like the dough consistency. I believe that’s how keto baking is so challenging, fun, and worthwhile! Happy Baking!
