Ingredients
Makes one sushi burger:
For the Rice Bun:
3,5 oz (100 g) Sushi Rice, uncooked
2-3 tablespoons (20 ml) Rice Vinegar
1 tablespoon (10 g) Sugar
1 teaspoon (2,5 g) Salt
For the Sushi Rice Burger:
2,5 oz (70 g) Smoked Salmon
½ Fresh Avocado
2 tablespoons Philadelphia Cheese
Wasabi
1 sheet Nori Seaweed
Black Sesame Seeds or Poppy Seeds
Sesame Seeds
Directions:
Prepare Sushi Rice:
place raw Sushi Rice in a bowl and wash it with cold water until the water is clear (change the rinse water about 4 times). Cover the rice with cold water (about 0,5 inch - 1,5 cm above the rice level) and let soak for 20 minutes. Then place the water and the rice in a medium size saucepan, cover with a lid and cook for 10 minutes: start cooking at medium heat, when you will hear boiling sound lower the heat or the water will come out from the lid!
When the 10 minutes are over, turn the heat off, keep the saucepan covered with the lid and let stand for 15 minutes: don’t take off the lid.
Prepare Sushi Rice Seasoning:
Place Rice Vinegar, Sugar and Salt in a small bowl and microwave for 30 seconds or until sugar is completely dissolved. If you haven’t got a microwave, place the seasoning in a small saucepan and dissolve the sugar over low heat.
Place the cooked sushi rice in a big size bowl, pour the Rice Vinegar Seasoning and combine. Let the rice cool down completely.
Make Rice Bun:
Line a small bowl with plastic wrap and pack 3-4 tablespoons of rice into the bowl; press well the rice with a spoon.
To make the bottom bun, you can use the same method, or press the rice in a round steel ring, or – as I show in the video – you can place 3-4 tablespoons of rice on the serving dish and mold with a spoon or with your fingers wet in water and rice vinegar.
Assemble Sushi Burger:
On top of the bottom bun, placesmoked salmon. Spread some Philadelphia cheese and a little bit of Wasabi on top (be careful, Wasabi is very hot!). Add fresh Avocado slices, smoked salmon and Philadelphia cheese. Remove the rice bun top from the small bowl, from the plastic wrap and place it on top of the sushi burger.
Decorating with a strip of Nori Seaweed and sprinkle some sesame seeds and poppy seeds on top.
Serve with soy sauce and wasabi.
