2-4 beef cheeks trimmed
4-5 quarts of beef stock
3 carrots halved
2 bookmarks halved
1 1/2 tbsp Worcestershire sauce
Salt and pepper to taste

Horseradish sauce:
1/2 cup mayo
1/2 cup sour cream
1/4 cup prepared horseradish
2 tsp W sauce
1 tsp white wine vinegar
Salt and pepper
