Liverwurst: How to Eat More Liver
Liverwurst is a great way to eat more liver! Watch us make out own batch of liverwurst with this liver sausage recipe. Did it taste good? Was it a success? You will have to watch to find out :)
Like we mentioned, liver is a nutritional powerhouse, nature’s multivitamin. Check this out!
One ounce of chicken liver contains: (what is in 1/8 of this recipe)
Vitamin A 3732 IU (75%)
Vitamin C 7.8 mg (13%)
Thiamine 0.1 mg (5%)
Riboflavin 0.6 mg (33%)
Niacin 3.1 mg (15%)
Vitamin B6 0.2 mg (11%)
Folate 162 mcg (40%)
Vitamin B12 4.7 mcg (79%)
Pantothenic Acid 1.9 mg (19%)
Iron 3.3 mg (18%)
Phosphorus 113 mg (11%)
Zinc 1.1 mg (7%)
Copper 0.1 mg (7%)
Manganese 0.1 mg (5%)
Selenium 23.1 mcg (33%)
*Also worth noting that because liver is from an animal source, many of these nutrients are a lot more bio-available than they would be in the context of a plant (specifically the vitamin A and minerals).
Our Liverwurst Recipe:
1 lb pork shoulder
½ lb pork belly
½ lb chicken livers
1 onion finely diced
2 tsp paprika
1 tsp marjoram
1 ½ tsp salt
generous freshly ground black pepper
½ teaspoon cumin/coriander mix
¼ tsp mace
¼ tsp allspice
¼ tsp ground cardamom
Grind meat components in a meat grinder separately, then together. Add onion and spices, mix and chill in freezer until firm. Grind again, then stuff into muslin bag or sausage casings. Simmer in water for 3 hours weighted down with plate. Cool in ice bath, then chill in fridge overnight. Enjoy!
