My Pavlova with Strawberries and Rosewater Recipe for Summer (and any time of the year)

I love pavlova. Not only for its deliciousness but I also find making it very therapeutic. When I think of a summer pavlova, I think of my pavlova with strawberries and rosewater.

Pavlova with Strawberries and Rosewater
Serves 6–8
• 6 egg whites, from large eggs, at room temperature
• 325 gr sugar
• 2 teaspoons cornstarch
• 2 teaspoons lemon juice

For the rosewater macerated strawberries:
• 300 gr fresh strawberries, hulled and cut into slices
• 1 tablespoon lemon juice
• 2 teaspoon sugar
• ½ — 1 teaspoon rosewater

For the whipped cream:
• 300 ml double cream
• 50 gr icing sugar
• 1 teaspoon vanilla
