Btw, I absolutely LOVE that the bird iconography is easier to see now that the Imagineers added that fabulous new fountain in Adventureland 😍

As for the hay bale at the end of the Matterhorn, as the story goes Walt wanted to try out the ride before the coaster was done, including the brakes. So they brought the bobsled halfway up the mountain and rigged up a bunch of hay bales at the bottom of the run to stop the sled at the end. Walt loved how the hay all flew up in the air at the end, and insisted on the guests having a similar experience. But instead of hay, of course we have water. (The water also helps slow down the sleds as well).

When Tony Baxter was creating Big Thunder, he wanted to pay tribute to Walt’s original mountain, and so the “splashdown” was added at the end.

Also technically that pig was in POTC for a short while, but it wasn’t originally intended for that attraction, so it feels disingenuous to me to label it as such.
