CHICKEN PARMESAN MEATBALLS | Cooking with Katiepie

Need a quick & easy dinner idea?? This is delicious recipe for Chicken Parmesan Meatballs is a new favorite in our house. It's perfect to make on a busy night - you can even get the kids to help roll the balls!

-----CHICKEN PARMESAN MEATBALLS-----

INGREDIENTS: (Makes about 15 medium-sized meatballs)
1 1/2 lbs ground chicken
3/4 cup breadcrumbs
2 Tbsp finely diced onion*
1 Tbsp chopped fresh parsley*
1/2 cup shaved parmesan cheese
1 clove minced garlic
1 tsp fennel seeds
1/2 tsp Italian seasoning*
1/2 tsp dried basil*
salt & pepper to taste
1 whisked egg
zest of half a lemon
3 Tbsp olive oil
1 jar of pizza sauce
1 block of fresh mozzarella
*these are suggested portions of spices – if you like more flavor, add a dash more!

PREPARATION:
Preheat oven to 400°F. Place all ingredients EXCEPT olive oil, pizza sauce, and mozzarella into a big bowl and mix together with your hands. Roll into 2 inch balls. (You can make them bigger or smaller if you want – just adjust the cooking time up or down by a few minutes as needed!) Line a baking sheet with foil and lightly spray with cooking spray. Space the balls evenly on the foil-covered baking sheet. In a separate bowl, mix together a few spoonfuls of pizza sauce with the olive oil. Brush the sauce mixture over each ball. Bake for 15 minutes. After taking the meatballs out of the oven, top each with a spoonful of pizza sauce and then a slice of mozzarella. Broil for 5 minutes, or until the cheese is browned and bubbling. To serve, I topped each meatball with a little more warm pizza sauce. These are great served over noodles with a side of sautéed asparagus. They’re also delish without the extra carbs too if you’re healthy like that! ;-)
