BACK TO SCHOOL FREEZER MEALS

Hey guys! Today I am sharing some of my favorite Back To School Freezer Meals. Taking a little extra time to get some freezer meal prep done before this next season of life hits is definitely going to help me save that time during our busy school weeks.

Recipes:

Sausage & Peppers
2 - 10 oz pkgs sausage links, sliced
3 bell peppers (red, green, yellow), sliced
2 - 14 oz cans diced tomatoes, not drained
1 tsp beef bouillon base
2 tsp minced garlic
1 tsp seasoning of choice

Mix all ingredients in a gallon size freezer bag. Allow to defrost overnight in the refrigerator. Dump in crockpot and cook on low for 5-6 hours or high for 3 hours. Serve over rice.

Chicken Enchiladas

2.5 cups chicken, cooked & diced
10 flour tortillas
2 cups shredded cheese, plus extra for top
2 - 10 oz cans enchilada sauce
1 cup sour cream
small can diced green chiles

Mix together the chicken, 1 can enchilada sauce, 2 cups cheese, sour cream and diced green chiles. Add a spoonful or 2 of the mix to the center of a tortilla. Roll up and place in baking dish. When all your enchiladas are wrapped, pour the second can of enchilada sauce over them and top with more shredded cheese. Top with foil. When ready to cook, bake at 350 degrees for 20 minutes.

Taco Rice Casserole

2 lbs ground beef
1 onion, chopped
1 zucchini, shredded
2 cans corn, drained
2 cans black beans, drained & rinsed
2 cans Rotel
1 pkg taco seasoning
4 cups cooked rice
shredded cheese

Makes 2 pans.

Brown your meat. Add in onions and zucchini and cook until soft. Stir in taco seasoning. Add corn, tomatoes and beans. Spoon 2 cups of rice into bottom of each pan. Spoon meat mixture over rice. Top with shredded cheese. Cover with foil and label. Thaw overnight in fridge. Bake at 350 degrees for 45 minutes with foil on. Then remove foil and cook until top is nice and brown.

Parmesan Crusted Chicken Tenders

I doubled this recipe.

1/3 cup whole wheat flour
1/2 tsp salt
1/4 tsp pepper
1/4 tsp paprika
2 eggs
1 tbsp water
1.5 cups panko
1/2 cup grated parmesan cheese
1.5 lbs chicken tenders

Preheat oven to 425 degrees. You will need 3 shallow dishes.
In first dish, whisk together flour, salt, pepper and paprika. In second dish, use fork to combine eggs with water. In third dish mix together the panko and parm cheese. Set up an assembly line with the dishes. Dip the chicken in the flour mixture, then the egg, and then the panko. Be sure to fully coat each piece with each of the 3 mixtures and place on baking sheet. Bake for 18-20 minutes, until cooked through. Let cooked chicken cool and then freeze in a gallon freezer bag. When ready to serve, bake directly from the freezer at 350 degrees for 18 minutes.
