🌱 30 DAYS OF VEGAN 🌱 Killer Chocolate Cookies 🍫 🍪
It’s day 21 and today is an old recipe of mine from my first ever ebook! These are deliciously gooey, melt in the mouth cookies with extra chocolate!
Makes 10 cookies
Prep: 1 hour 30 minutes
Cook: 12 minutes
200g vegan butter (I use Stork)
300g light brown sugar
1 chia egg (1 tbsp chia, 3 tbsp water, mixed and set in the fridge for 15 minutes)
275g self raising flour
80g cocoa powder
2 tsp vanilla extract
1 tsp baking powder
150g vegan milk or white chocolate, broken into chunks
1/4 cup milk
1. Preheat your oven to 200 °C (400°F) and line two baking trays.
2. Whisk together butter and sugar.
3. Mix in the chia egg
4. Pour in the flour, cocoa powder, baking powder and vanilla extract. Stir to combine.
5. Break up the chocolate into large chunks and add into the mixture with the milk. Mix with a spoon, or get stuck in and mix with your hands (wet them beforehand).
6. Set the cookie dough in the fridge for 1 hour.
7. Shape into ten cookies (wet hands again to help with stickiness) and place on the trays, leaving a good amount of space for them to spread.
8. Bake in oven for 12-15 mins (be careful not to overcook - mine took 12 minutes). Leave to cool completely (they will be soft and crumbly until completely cooled where they will set).
