INGREDIENTS:-
FOR MARINATION:
* Water (पानी) - some
* Lemon juice (निम्बू का रस) - 1/2 lemon juice
* Soya Chaap (सोया चाप) - 5-6 sticks
* Mustard Oil (सरसों तेल) - 1-1.5 tbsp
* Kashmiri Red Chili (कश्मीरी लाल मिर्च) - 1/2 tsp
* Curd (दही) - 2-3 tbsp
* Chat masala (चाट मसाला) - 3/4 tsp
* Oil (तेल)
FOR GRAVY:
* Oil (तेल) - some
* Onion (प्याज) - 1
* Tomatoes (टमाटर) - 3 medium size
* Bay leaf (तेज पत्ता) - 1
* Small cardamom (छोटी इलायची) - 1
* Star anise (चक्र फूल) - 1
* Mace (जावित्री) - 1 small piece
* Cloves (लौंग) - 2
* Cumin seeds(जीरा) - 1/2 tsp
* Ginger (अदरक) - as per taste
* Garlic (लहसुन) - as per taste
* Green chili (हरी मिर्च) -
* Chili powder (लाल मिर्च पाउडर) - less then 1/2 tsp
* Turmeric powder (हल्दी पाउडर) - less then 1/2 tsp
* Coriander powder (धनिया पाउडर) - 1 tsp
* Roasted Cumin Powder (भुना जीरा पाउडर) - 1/2 tsp
* Salt (नमक) - as per taste
* Water (पानी) - as required
* Coriander leaves (धनिया पत्ती) - for garnishing
RECIPE:
Take some frozen Soya Chaaps and put them in Water for 1-2 hours and then keep some Water for boiling. Put Lime Juice in it and then put the Soya Chaaps in the heated Water and boil them for 2-3 mins. Then take out the Soya Chaaps and remove the sticks from them and cut them in pieces.
Then fry the Soya Chaaps and then for marination, heat some Mustard Oil, put some Kashmiri Red Chili powder in it and put it in a bowl. Then put some Curd, Chaat Masala and the fried Soya Chaaps in it and marinate them.
Take a pan, put some Oil, long chopped Onion in it and roast the Onion and chop some Tomatoes and then grind the Tomatoes and Roasted Onion and make a paste.
In the same Oil, put a Bay Leaf, Cardamom, Star Anise, Mace, Cloves and Cumin Seeds. Then put some finely chopped Ginger, Garlic and Green Chilies and roast them then put some Red Chili Powder, Turmeric Powder and the paste of Tomato and Onion in it. Let it to be cooked and then put some Coriander Powder, Roasted Cumin Powder and Salt and cook it. When it releases fat, put the marinated Soya Chaaps in it and roast them for at least 5 mins on slow flame and then put some Water in it and cook it on medium flame by covering it for at least 8-10 mins. Then put some Garam Masala Powder, Dried Fenugreek Leaves and cook it for 2 mins more.
Then turn off the flame and take out the extra Oil from it and garnish it with some Coriander Leaves. In this way, Soya Chaap with Gravy will get ready to serve.
