Yuca Recipe: I made 10 servings , 1 cup per serving for 5 points.
- 2 lbs yuca
- 5 garlic cloves, chopped
- 2 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- salt + pepper to taste

how to make:
wash and dry your yuca, peel skin off yuca, chop yuca into larger dice size pieces, then in a pot add water and yuca place lid on an boil until soft about 15 minutes.

chop your garlic, once yuca is done cooking and softened, drain the yuca, then add into a bowl with your garlic, lemon juice, oil, salt + pepper, and toss together.
