Lemon loaf cake ✨

Ingredients:
- 200g all-purpose flour
- ⁠1 tsp baking powder
- ⁠1/2 tsp baking soda
- 150g unsalted butter, softened
- 180g granulated sugar
- 2 large eggs
- 1 tbsp lemon zest (from about 1 lemon)
- 30 ml fresh lemon juice
- 1/2 cup buttermilk (or milk with a splash of vinegar)
Preheat your oven to 175°C. Grease and flour a loaf pan.
In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes. Add the eggs one at a time, mixing well after each addition. Then stir in the lemon zest, lemon juice, and buttermilk. Gradually add the flour, baking powder and baking soda. Mix until just combined.
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. You can drizzle a simple lemon glaze over the top if you like!
