APPLE TARTE TATIN!!! New year, new kitchen, new baking challenges! Wanted to give a go at tarte tatin using my hexclad pans in my new Upstate kitchen since I #NeverMadeItBefore. Sometimes a culinary leap of faith pays off, since this might be my new favorite entertaining showstopper!!
Apple Tarte Tatin
For the Crust:
1 1/2 cups all-purpose flour, plus more for dusting
1/2 teaspoon kosher salt
4 ounces (1 stick) unsalted butter, cold and cubed
1/4 cup ice-cold water
2 tablespoons vodka
For the Apples:
3 pounds (8 medium) Honeycrisp apples, peeled, quartered, and cored
4 cups apple cider
1 cup granulated sugar
4 ounces (1 stick) unsalted butter
1 teaspoon kosher salt
1 teaspoon vanilla extract (or 1/2 vanilla pod, scraped)
For the crust: In a medium bowl, stir the flour and salt to combine. Add the butter and using your fingers pinch to flatten every piece of butter into the flour. Add the water and vodka and mix with your hands until a shaggy dough forms. Transfer to clean work surface and roll out into an 8-inch rectangle. Fold in half into a square, then rotate 90°. Repeat this fold 2 more times, dusting with flour as needed. Wrap in plastic and chill for 1 hour.
For the apples: Preheat the oven to 425°F. In a high-sided skillet or medium pot, combine the apples and cider over medium-high heat. Bring to a simmer and cook until just tender, about 5 minutes. Using a slotted spoon transfer the apples to a pan. Reserve the cider for drinking.
In a large skillet, heat the sugar over medium-high heat. Cook, stirring often, until deep amber in color and no more clumps of sugar remain, 3 to 4 minutes. Remove from the heat and stir in the butter, followed by the salt and vanilla. Shingle the apples, cut-side up over the caramel.
On a floured surface, roll out the dough into a 12-inch round. Drape over the apples, tucking the edges into the pan. Bake for 30 to 35 minutes until golden, then let cool in the pan until just warm to the touch. Place a platter over the skillet and invert to reveal the tarte tatin, then slice and serve!
