I’ve been so lucky to be able to do two seasons back to back and the final episode for Padma, as well. I think a lot of people would dream to have her say your name as the winner for the very last time. I’m sure there’s going to be someone else that she’s going to be passing the baton on to, and it’s gonna feel just as special. But the fact that she’s been there for 19 seasons, it’s going to be hard to watch it without her, but I’m also excited at the same time, because I know that she’s going off and she’s going to do all these amazing things, she’s not going to stop. And also, it’s going to be amazing for “Top Chef,” as well. It’s turning a page where this is a new era. And hopefully we have more chefs that are in there, do some studying and really elevating what “Top Chef” means. Because it has a brand and “Top Chef” is such a prestigious name. And I hope that it keeps up with the format where it pushes chefs to reach beyond, to become really creative, diverse and cook a lot of different things that they love.

“I tried not to think about it too much. I think that Top Chef, as much as you think that it could be physically demanding, it's very mentally demanding and you cannot get comfortable. I obviously was starting to feel that I was starting to take a little bit of the lead, but also, at the same time, I was never comfortable with it,” he says. “So it's all those sort of things where you just have to really think about it and not get too ahead of yourself. I was extremely proud to be able to win so many challenges in probably arguably one of the hardest seasons of all time.”

As is tradition, the final three chefs were treated to a dinner with Tom, along with Padma and Gail. This season was no exception with a pre-finale meal at Marsan par Hélène Darroze. Chef Darroze comes from a family of generations of chefs, and Marsan is conceived as a tribute to her roots in the southwest of France with a prix fixe menu that changes weekly. Opt for lunch or dinner in the dining room — or for a totally VIP experience. There's also a 20-seat host table (lunch only) and a seven-seat chef's table (where the chefs and judges were seated) which is, for sure, by reservation only so plan ahead.

Once the meal at Craft begins, Colicchio can’t help but judge the dishes on the British-inspired menu again, comparing them to the first time he tried each course in London. He’s not as impressed by Buddha’s tomato tea component as the rest of our table, admitting that it’s a clever take on the traditional English breakfast but pointing out that chefs have been making tomato water for years—Buddha just warmed it up. His favorite dish is Sara’s spin on Cullen skink—cod wrapped in leeks and swimming in a smoked fish and onion sauce—though he was overruled during the episode and the win went to Buddha.

Sara: I think one of my favorite dishes this season was probably something you only saw if you were on" Last Chance Kitchen": my burnt cabbage. People think, "Uh, burnt cabbage?" It's just a humble little thing, you know, burnt cabbage with apples and bacon. I loved that dish and I also love my Cullen Skink dish on Restaurant Wars. I think that a lot of people don't realize, and we talked about it a little bit before, but Buddha had an amazing idea for Restaurant Wars and part of being a chef is recognizing amazing ideas and how you could support each other. There was no need to argue with that idea, it was such a perfect idea, and he had an amazing list of dishes that we all could kind of pull from. Even though Buddha didn't pick me because I was last pick . . . I was glad to be on the team. [Laughs]
