Whats better than a Rainbow? Double Rainbow! These Double Rainbow Cupcakes look absolutely AMAZING and are easier than you might think to make. Rainbows are everywhere at the moment because we are so grateful for all the hard work that the NHS and other Key Workers are doing, and these cupcakes are sure to bring a ray of sunshine to your kitchen. For the Cupcakes:
190g Soft Butter
190g Caster Sugar
190g SR Flour
Heaped 1/4 tsp Bicarb
3 Eggs
2.5 tbsp Milk
1/2 tsp Vanilla

For the Icing:
200g Soft Butter
400g Icing Sugar
Pinch of salt (optional)
1/2 tsp Vanilla
2-3 tbsp Milk
