Fixing/Sharpening Shun DM0712 VG10 Chinese Cleaver 180mm From Coarse Stone to Finishing Stone

In this video, I show you how to sharpen/fix a Chinese Cleaver with many chips. You will understand how important a coarse stone is. The key is to do a perfect job on your coarse stone. The time you spend on a coarse stone should be the total time you spend on the rest of stones. Without a perfect job on your coarse stone, you never get a clean edge afterwards. I used 1000 grid, 3000 grid and 8000 grid after 180 grid coarse stone. After coarse stone, you just need to keep the same sharpening process on each grid. Don't sharpen too much on each grid, meaning don't over sharpen your knife. 1000 grid overwrite 180 grid's surface; 3000 grid overwrite 1000 grid's surface; 8000 grid overwrite 3000 grid's surface.
