Madeleines are one of my favourite treats to make whether that's for a casual snack, parties or as presents for friends. They're easy to dress up with some decor and have the best combination of flavours from the browned butter and nutmeg. Try these out they won't let you down!

Brown butter madeleines

350°F / 177°C
8 - 9 mins

6 tbsp (85 g) browned butter (measure this after you brown the butter)
3 (without shell 150 g) large eggs
2/3 cup (135 g) granulated sugar
1 cup (120 g) all purpose flour
1 tsp (4 g) baking powder
1/4 tsp (1.4 g) salt
1/4 tsp (0.6) g nutmeg
1/2 tsp (2 g) pure vanilla extract
more softened butter & all purpose flour for the pan

Melted white chocolate and pistachios for decor

6大勺 / 85克 焦化奶油
3个 / 去壳150克 大号鸡蛋
2/3杯 / 135克 白糖
1杯 / 120克 中筋面粉
1小勺 / 4克 泡打粉
1/4小勺 / 1.4克 盐
1/4小勺 / 0.6克 豆蔻粉
1/2小勺 / 2克 纯香草精
软化黄油和中筋面粉
