Espresso Extraction on the Bezzera Strega TOP Version - Part 3 of 3.

Okay. After that last disaster, pulling on the lever and releasing it without holding it, water splatters all over the place, the cups go flying, and the portafilter can actually fly off. That's one thing I wanted to demonstrate for you NOT to do. As you can see here, we have a nice hot portafilter, we can't keep a hand on it. We have a good amount of dose on the coffee grinds, nice polished tamp. We will lock this in to the group head, which is nice and hot. You can't keep you hand on that either.
We're going to make our espresso. This machine will take a lot of practice with the grind. If your grind is too course, it's going to come out too fast. If your grind is too fine, it's going to come out too slow. Basically, you pull down on the lever, engage the pump. Once you start getting a little bit of a drip or a flow, we're going to release. At this point, for beginners, you'd like to guide the handle up, just in case your grinder is too course, so it doesn't flicker and go all over the place. Just guide it up. At this point, you can probably let it go, 'cause there's not much more to go there. The espresso is coming out a little bit fast, but we're getting some good color.
There's the espresso with nice crema. The taste is a really smooth flavor. The beans we actually use is a very dark roast, which on traditional pump machines can have a little more bite to it and it's mostly made for cappucinos. On a lever machine, with a lot of lever machines, the flavor kind of smooths out and give you a different nice flavor profile.
Alright. Then, the other thing on the machine, you're going to see a white film. This is not white on the machine. This is actually a film that you can peel off. There's also a little instructional sheet here not to put your head or face in front of the handle - and then on the reservoir and the top version that has a reservoir, you have your reservoir here and this can easily be lifted up to remove for refilling or you can refill it right from the top.
Steam power. Steam power here. Your hot water one, for your Cafe Americanos or portafilter is right here. This takes water from the boiler. The group head water comes from the heat exchanger, which is a big boiler inside and there is a tube that goes through to get flash heated.
