Today I’m making soft, chewy, and super chunky 3-layer cookies!These cookies have a buttery cookie base, a sweet mochi center, and a delicious red bean filling. I made three flavors: classic, matcha, and black sesame.
Recipe:
Cookie Base:
Butter 200 g
Date sugar 90 g
White sugar 92 gSalt 1.5 g
Egg 2
Flour 315 g
Baking powder 3 g
Baking soda 1.5 g

Divide into 3 equal parts (total dough weight 345 g):
* Add Matcha 10 g to one part
* Add Black Sesame 20–25 g to another part
* Third part stays plain (classic)
Cookie Dough per Cookie: 80 g each

Mochi (Inside):
Glutinous rice flour 150 g
Sugar 25 g
Milk 85 g
Water 85 g
Instructions: Microwave in 40-second intervals, 3–4 times depending on consistency.
Mochi per Cookie: 38 g

Red Bean Paste:
* 25 g each

Assembly (per cookie):
* Cookie dough (outer) → 80 g
* Mochi (inside) → 38 g
* Red bean paste → 25 g
* Total weight per cookie: 143–145 g

Baking:
* Bake at 170 °C for 12 minutes
Extra tip:
* Leave the cookies overnight in the fridge before baking, this way they develop more flavor and become even more chunky
