Back by popular demand, cousins Scarlet and Tamsin Allen return to the stage with a joyful and confident demo that celebrates simple, traditional cooking done right. Representing the next generation of Irish food, these two young cooks (both just 16) showcase impressive skills, knowledge, and passion.
In this session, they make homemade butter, sweet scones, and raspberry jam from scratch, sharing practical tips along the way. From using Jersey cream for higher butterfat, to reusing buttermilk in baking, to understanding pectin in jam-making, this demo is full of insight as well as personality.
With deep roots in Irish food culture and strong family influences, Scarlet and Tamson highlight the importance of learning to cook from scratch and keeping food traditions alive.
